If you see a modified barrel on a three-wheeled cart, it’s likely to be an oven for baked sweet potatoes.   The variety of sweet potato used is naturally sweet and needs no sugar or butter to make a quick snack.  Take a few of these home and you can make a nice casserole by adding chopped walnuts, brown sugar and butter, or your favorite topping.  These are usually only available from late fall to early spring
